A 14th-century palazzo in the beautiful Umbrian village of Panicale, just about halfway between Florence and Rome, is the setting for Rastrello, which was a natural olive-oil farm first, and only later became a 12-room luxury boutique hotel. In the rooms, original architectural features like timbered ceilings are contrasted with modern elements like custom-designed contemporary furniture; the resulting atmosphere is timeless in that inimitably Italian way. Rastrello Cucina & Giardino serves hyper-local seasonal fare with a view of Lake Trasimeno, and, as you might imagine, makes liberal use of Rastrello’s own extra virgin olive oil.
