Hotel Britomart, on the Auckland waterfront, shows the way: its handmade bricks and salvaged wood aren’t just sustainable but radiate organic warmth, and the interior style may be understated but never feels austere. The rooms are more than comfortable enough, while the suites are lavish indeed, and the hotel’s public spaces are delightfully well-worn, from the various Libraries, for lounging or private dining, to Kingi, an all-day seafood-focused restaurant in a beautifully crumbling industrial-style space.
