It's worth seeking out this restaurant, the entrance of which is a bit hidden. A long, mirrored corridor leads you to an interior characterised by distinctive architecture and a clean-lined, minimalist, Far Eastern design. The food is no less interesting: The Japanese-inspired cuisine is completely vegan, with fermented food playing a major role – hence having built their own Fermentation Lab. The creative seven-course set menu can be extended by an additional course. The dishes seem pleasingly pared back, although a lot of effort has gone into them. An individual signature is evident, for example, in the delicate maitake with robust roasted aromas and a subtle note of thyme, accompanied by a sensational sauce made from mushrooms, sake, port wine, vanilla and coffee, which inspires with fantastic depth. The intriguing tea pairings are an absolute must! Top-notch teas are celebrated here and presented in depth. It is also possible to go for a mixture of tea and other drinks pairings.
