Then there is the elegant restaurant with its chic decor, where Chiel de Groot incorporates his creative ideas into a surprise menu and beautifully presented plates of food. He likes to use produce from his own vegetable garden to bring his creations to life. Intensity is his guiding principle: a grilled sandwich filled with game stew, for instance, makes for an original accompaniment to a medium-rare roe fillet, an exquisite game jus and a cream sauce with chanterelles.
