Knystaforsen, Sweden: A Restaurant and a Home

Join us as we take a tour around one of our Green Star restaurants, where nature and family life lead the way

At the MICHELIN Guide Nordic Countries Ceremony 2023, held on Monday 12th June, seven new Michelin Green Star restaurants were unveiled. Invited up to announce the awards was Nicolai Tram – in his trademark hat – who won both a Green Star and a Michelin Star the previous year for his restaurant Knystaforsen in Rydöbruk, Sweden.

Speaking on stage, he said that the success of his restaurant boils down to "love, care and respect", and that it was his sustainable ethos that led him to winning his Michelin Star and not the other way around.

For Nicolai, Knystaforsen is not only a restaurant but also a home. The place was born out of a desire to escape the rat race and spend quality time together with his family – and now, within this remotely set old sawmill, he has everything he ever wanted. Every day he gets to work with his wife and spend time with his two young sons, and the local producers have now become his friends.

With the river running beside and woodland as far as the eye can see, nature is at every turn here, with many ingredients sourced from these wonderful surroundings and everything then skilfully cooked over an open fire.
