MICHELIN Guide’s Point Of View

Flowers take pride of place at Perceel, where they brighten the contemporary decor that complements so beautifully the historic character of this building. They also take pride of place on your plate as Jos Grootscholten enjoys using flowers to add a final flourish to his dishes, which are full of pure and natural flavours.

His cuisine is based around produce from his own herb garden and the use of acidic flavours. A perfect example is his signature steak tartare in which sweet and sour cornichons and kimchi add extra punch and the roasted quinoa provide a crunchy finish.

The chef also enjoys experimenting with interesting kombucha combinations, which his charming partner Sharon is happy to explain to guests.
