MICHELIN Guide’s Point Of View
One Star: High quality cooking
The chef was replaced on 1 February 2024. ‘FARO’ means ‘lighthouse’, and indeed Faro shines its light on a new era of Italian cuisine in Ginza, illuminating the richness of Japan’s topography and culture. Visiting food-producing regions and workshops where serving vessels are made enables the chef to reflect the passions of farmers and artisans in his fare. The sensibilities of the chef and his pâtissière also reside in the vegan set menu influenced by shojin-ryori, the vegetarian cuisine of Buddhist monks.
Gastronomy & Sustainability
MICHELIN Green Star
"Our philosophy is to be in harmony with nature. Vegan menus reduce demand for livestock, which place a heavy burden on the environment. We promote the use of honey from Japanese bees to protect the ecosystem. We use organic herbs and vegetables to facilitate the natural cycle of things."
