"At Tèrra, each menu tells about a specific time of the year-it’s our chef’s tribute to the local farmers and their produce, to the fish from the Nordic seas, the ingredients he and his team forage…We celebrate and respect the whole ingredient, reusing every part, transforming most of the leftovers, until only fibres are left. For us sustainability is not just a slogan but a deep belief."
