Only 500m from the North Sea, this historic Scandinavian farmstead stands in the heart of the countryside. The stripped-back interior weaves a rustic spell, while the menu shines the spotlight on the rich produce of Zeeland. Seaweed, fish from the Oosterschelde, fermented vegetables, smoky flavours – superlative purity!
"We mostly harvest the ingredients from our immediate surroundings ourselves. Fermentation, drying and smoking are all done in-house and we work closely with local organic farmers and fishermen. We try to keep waste to a minimum. Anything that is left over is collected separately and processed into biomass. We also have plans to start a food forest."
