MICHELIN Guide’s Point Of View

The owner-chef visits the market daily and puts together set menus that combine standard seasonal produce with novel ingredients. He uses a blend of sesame oil and cottonseed oil to keep the tempura light. The amount of batter is adjusted according to the type of tempura so as to produce a sense of oneness in each piece: less with pleasantly bitter angelica-tree shoots and more with scallops and anago. At the end comes kakiage teishoku, tendon or tencha.
