MICHELIN Guide’s Point Of View

The chef adds his own creative touch to Shanghai cuisine. Examples are the ‘Daikon Pie’ with daikon and Jinhua ham fried in pie crust. Chinese mitten crab is in season in autumn and winter, when you can enjoy it in dishes like crab with Shaoxing wine and sautéed crab with black bean sauce. The home-style ‘Smoked and Fried Egg and Tomato’ involves imparting to eggs the aroma of oil dropped into the hot pan.
