MICHELIN Guide’s Point Of View

The owner-chef emphasises traditional cooking and puts particular effort into the dishes made with both Japanese and French wild game. The deer and boar pâté en croute are standard items that can be enjoyed year-round. From February to May, wild rabbits are stuffed with foie gras or truffles and stewed for about 10 hours to make the popular lièvre à la royale.
