MICHELIN Guide’s Point Of View

The owner-chef trained at a chakaiseki restaurant and emphasises traditional forms and tastes. The mukozuke is based on white-fleshed fish, and the use of soy sauce brings out its lightness of taste. The ingredients in the nimono soup are also light flavoured so as to emphasise the broth. The hassun is exquisite and incorporates the bounty of both land and sea. The owner-chef’s teacher endowed him with the principle of ‘taste and beauty’.
