MICHELIN Guide’s Point Of View

Mitsuhiro Komuro is a chef to the tea ceremony family of the Enshuryu school. Chakaiseki is called the starting point of hospitality, and he values that spirit, paying attention to everything about the furnishings, serving dishes and cooking. The true charms of the season are bamboo shoots from Tsukahara in the spring, hamo from Akashi in the summer, matsutake from Iwate and Tanba in the autumn and duck from Niigata in the winter.
