MICHELIN Guide’s Point Of View

The chef’s theme for his dishes is ‘classic French’, he having learned classic cuisine at an auberge in Hakone. Good examples of this are the double consommé, duck with orange sauce, and lamb grilled with herbs and breadcrumbs. His specialities are crab and white-fleshed fish wrapped in a pie pastry. Catering to current preferences, he holds back on the oils and fats. To be enjoyed with wine selected by the sommelier.
