MICHELIN Guide’s Point Of View

The central Le Marche region is where the food cultures of northern and southern Italy blend. The chef calls himself a ‘Marche culinary researcher’, apprenticed in this region and seeks to convey its culinary delights. The south has a rich seafood tradition, and the north features handmade pastas, so his dishes combine both. One famous dish here is the ‘Vincisgrassi’ - lasagna that uses chicken liver. Try, too, something baked in the charcoal-fired range.
