MICHELIN Guide’s Point Of View

Owner-chef Kazuya Numata learned tempura by himself. Being from the Amakusa Islands (part of Kumamoto prefecture), he has tiger prawns and seafood delivered from there; the quality ingredients are fried in sesame oil. He serves longtooth grouper, rainbow-coloured in cross-section, and springtime bamboo shoots which he cooks to resemble roasted shoots. To end he serves tamagokake-gohan with egg yolk tempura, to which he adds meringue, and a tempura prawn, for a triple delight.
