MICHELIN Guide’s Point Of View

While showing respect for classical French cooking techniques, the chef adds his own ideas to create novel and memorable menus. The ‘Boudin Dog’ amuse-bouche is a classic dish with a playful touch. The restaurant logo, with some strokes missing, is meant to symbolise the chef’s “yet incomplete” pursuit of the art of cooking.
