MICHELIN Guide’s Point Of View

Hajime Yoneda used his own name for his restaurant as it expresses his own ideas. The menu is inspired by the themes of earth and space – and the natural way of things. The ‘Earth’ vegetable dish represents the cycle of rain from the mountain to the river and then to the sea. He takes an inventive approach to everything, from storing the vegetables to their chopping, heating and seasoning – and serves them with mineral-rich shellfish sauce.
