MICHELIN Guide’s Point Of View

Tetsuya Fujiwara wants to emphasise that fullness of spirit that Japan experiences with the changing seasons. The concept here is ‘a table of seasons and memories’, and the omakase menu expresses the desire to tug on the customer’s heartstrings and awaken recollections. The uniquely named dishes stir the imagination and come with surprising textures and in unusual combinations. The bread, full of air bubbles, is an original idea and uses the latest cooking techniques.
