MICHELIN Guide’s Point Of View

The founder was the only one authorised by the famous ryotei in Koraibashi to use the ‘Kitcho’ name. At the helm now is his son, who has his father’s skills and serves kaiseki. He’s particular about not only where the seafood comes from but the fishermen as well, and uses choice inshore fish such as tai and flounder. Taking a fresh look at traditional Naniwa vegetables, he also emphasises local production for local consumption.
