Housed in De L'Europe hotel, this upscale restaurant is lent a unique feel by its modern interior design, which features natural materials. Bas van Kranen's original approach to nature, which characterises his cuisine, emphasises vegetables, local produce and sustainability. Biodynamic growers have become regular suppliers and dairy products have been banished from the kitchen. His search for solutions feeds his creativity, and has resulted in a very pure style of cooking. Game appears on the menu in the autumn and winter, but in spring and summer, the chef turns his attention to the North Sea. The plant-based set menu is a constant, all year round. The small dishes are full of surprises right up to the last bite – a prime example is his signature dish featuring seasonal fruits and vegetables, each prepared differently. The intricate dance of flavours and textures is complemented by a fig peel oil, its gentle sweetness binding everything together. A light, airy hazelnut and Dutch wasabi emulsion adds a moderate kick. Bas van Kranen explores the depths of his ingredients, creating dishes that evoke emotion. He clearly takes pride in working with Dutch produce and now has the confidence to cook just the way he wants to.
