MICHELIN Guide’s Point Of View

Popular chefs Richard van Oostenbrugge and Thomas Groot have created this modern and intimate dining space where everything is based on perfection despite the deceptively informal ambience. Guests sit at the bar, watching the impressive kitchen team at work as they turn top-quality products into extraordinary delicacies.

Thanks to their inventiveness and classic culinary expertise, they create dishes that tell a story with just a handful of ingredients. Their originality lies in their ability to transform ingredients in totally unexpected ways, as demonstrated by the oyster ice cream served with smoked turbot. Or you may like to try the potato stuffed with minced veal tartare, poached marrow and caviar, topped with a potato velouté flavoured with whitebait. Simple yet brilliant, the cuisine served here is full of delicate contrasts. A pre-dinner aperitif on board a canal boat provides the perfect prelude to this truly magical experience.
