MICHELIN Guide’s Point Of View

‘Served straight from kitchen to table’ is Masahiko Morimoto’s credo. The meal starts with him preparing the dashi for the soup, shaving the katsuo-bushi in front of the customer. Like at a dedicated tempura restaurant, he deep-fries each piece of tempura individually. He also serves unique dishes made with fruit, such as strawberry shiraae in the spring and vinegared muscat grapes in the summer. He puts much ingenuity and effort into creating straightforward dishes.
