MICHELIN Guide’s Point Of View

Plenty of high-quality seasonal ingredients go into the dishes, including ayu, hamo, matsutake and crab, and the owner-chef uses oil only sparingly when cooking. He jokes that his dishes are easy on the stomach and hard on the wallet. He also has a talent for creating dishes that combine similar ingredients, like different kinds of burdock, or white asparagus with green asparagus. You’ll make new discoveries with the unexpected combinations.
