MICHELIN Guide’s Point Of View

Owner-chef Takashi Fujimoto never wants his customers to get bored, so assembles a menu of kaleidoscopic variety. Egg cockle is dressed in vinegar miso; fugu is seasoned with karasumi, irizake and ponzu, to broaden the range of flavours. The clay-pot rice dishes are richly imaginative, with ingredients such as bamboo shoots with simmered anago and matsutake with soy marinated hamo. Lunch is wonderful, with customers able to choose as many à la carte items as they wish.
