MICHELIN Guide’s Point Of View
Stepping into this intimate restaurant—a refurbished old-style house—feels like being invited into the Nagashima’s parlour. The owner-chef had operated a restaurant in Chiba Prefecture but, feeling the pull of his birthplace, returned to his native Kyoto. The establishment goes back to the basics of Japanese cuisine, such as carefully selected ingredients and well-water fetched daily. Regardless of season, the soup is prepared with white miso in the Kyoto style.
