MICHELIN Guide’s Point Of View

While following the traditional flow of kaiseki, the owner-chef adds a touch of creativity. His specialities include grilled goma-dofu made with seasonal ingredients like fukinoto, eggplant and burdock root, and handmade soba with karasumi. Rice comes first on the undercooked side followed by a progressively well-done second and third bowl so you can compare. The tea ceremony practicing owner-chef serves usucha himself.
