Denmark’s oldest castle sits within a UNESCO Geopark, whose undulating landscape was carved out during the Ice Age. In 1937 the castle was transformed into a hotel and restaurant, and today it continues in this vocation, while offering great respect for both its history and the surrounding region. The seasonal multi-course menu is entitled ‘Time and Place’. ‘Time’ is evident in the atmospheric room, where thick whitewashed walls are broken up by huge glass-fronted wine rooms. ‘Place’ comes in the form of produce from the nearby fields, forests and seas, which features in carefully crafted, innovative and intensely flavoured dishes.

Set In the UNESCO Global Geopark of Odsherred, all our farming around the castle is organic, providing vegetables, berries and herbs. The woods on the estate are managed with a focus on creating biodiversity, and all the remains from the restaurant are used as compost or to feed the animals, farmed and wild.
