This restaurant will be relocated and reopened in March 2022. Based on his training at a restaurant that followed the Edomae sushi tradition, the owner-chef does not use sugar with akazu in the sushi rice. White-fleshed fish is a topping that can’t be done without vinegared rice, and an extra touch is added such as preparing the fish kobujime style or maturing it. Snacks include steamed awabi in the summer; simmered monkfish liver in winter; and spear squid with roe from February to March.
