MICHELIN Guide’s Point Of View
In a brand new hotel, chef Dominique Crenn (who has three Michelin stars at her Atelier Crenn in San Francisco) has named her first Parisian restaurant after California's state flower, in a nod to the American state where her talent was revealed. In a setting that celebrates greenery, you can savour the Californian vibes of this fresh, colourful cuisine, which plays on a variety of culinary influences (Asian, Latin American and Mexican). Meat is deliberately omitted. Prepared in the large open kitchen, the dishes on this menu, some devised for sharing, are sure to make you smile; they have the wow factor and depth, eg "ikejime" tuna tartare with kimchi wrapped in a shiso leaf. There is a lovely terrace overlooking a lush garden – a rare thing in Paris.
