MICHELIN Guide’s Point Of View
Leaving the city of Tours to set up shop in this old house on a small square in the countryside was an easy step to take for Gaëtan Evrard, who is very fond of his native province of Touraine. Meat and vegetables from the region, fish sourced in Brittany: produce is celebrated here, elevated by a chef who has a talent for bold gestures – as in his beautiful Le Guilvinec cod fillet drizzled with a succulent sauce flavoured with saffron and Sainte-Maure de Touraine goat's cheese, or his brilliantly reimagined Nougat de Tours tart.
