The owner-chef prefers tender, fatty pork. The fragrant tonkatsu is deep-fried in a copper saucepan. Using light batter makes it less oily and also makes it one with the pork. Go with the upper loin cutlet for a sumptuous thick cut. The restaurant is very popular at lunchtime, but reservations can be made, except for lunch at weekends and on holidays.
