MICHELIN Guide’s Point Of View

On top of cooking, the owner-chef learned how to make things fun from his teacher in Gifu. So he puts together a menu based on his customers’ preferences and works in a cheerful way. For him, Japanese cuisine is more than just about minimalism. He adds his own unique ideas such as garnishing inaniwa udon with boiled awabi coated with awabi liver in the summer. He also puts much effort into training younger chefs out of gratitude for how he was taught.
