Under the helm of Korean chef Sukwon Yong, Perception rolls out a felicitous, spot-on score that wavers between France and Korea. In a subdued decor of polished concrete and soft lights, the lunch and evening tasting menus celebrate first-class, flavoursome ingredients: mandu (Korean dumplings) with a gochujang-laced KFC (Korean Fried Chicken) sauce or flame-licked mackerel, daikon radish balls, tarama ice cream and Japanese-inspired yuzu koshô.
