The superb solid hinoki (Japanese cypress) counter seats just 10 guests who are treated to a splendid view of the chef and his assistants painstakingly performing their tasks with razor-sharp precision. Delicately crafted nigiri, maki, soups and binchotan-grilled dishes are served on exquisite tableware at the intersection of tradition and contemporary design.
