Sustainable gastronomy
While the short supply chains we use guarantee that we work with the best local and seasonal produce, our ambition for sustainability is reflected in every aspect of our cuisine. Recycling is pushed to the maximum, packaging now excludes plastic in favour of glass or stainless steel, and the little food waste we have is given to the animals kept in our gardens.
