MICHELIN Guide’s Point Of View

The name of the restaurant translates as “to find” in Basque, Castilian and even Guaraní, and is the key to everything here. The original cuisine on offer, overseen by chef Andoni Luis Aduriz, is served to an urban-style backdrop, and highlights, through a unique approach, the rich gastro-cultural fusion that exists between the Basques and the different peoples of Latin America. Here, you’ll find ceviches, tiraditos and quesadillas alongside typical Basque dishes such as “txangurro” (spider crab) and “begihaundi” (squid), and guacamoles that you can make yourself by following clear instructions!
