A love of and a blind faith in traditional cooking encapsulate the values of this restaurant with its surprising array of rice options, Basque dishes, and specialities such as Segovia-style suckling pig. The restaurant, run by the third generation of the family, always works with local producers to source its ingredients, creating dishes teeming with local flavours, with some recipes on the menu dating back to the region’s long period of Moorish rule. The creamy rice with local partridge, the delicious snails in an almond and dried red pepper sauce, and the artichokes are particularly popular.
