Chef Ridder is keen to show the different aspects of his cooking. The intensity of his “golden pastry” with foie gras and truffle sauce is superb, while his fish dishes reveal his eye for subtlety and gentler flavours. Mario Ridder is versatile and his classic knowledge is particularly well expressed in his soufflé, which is definitely worth the 20-minute wait!
