MICHELIN Guide’s Point Of View

A small bridge links Burano to Mazzorbo, where Venissa stands in the shade of a bell tower in a bucolic setting of vegetable gardens and vineyards. A walled vineyard acts as a backdrop to the restaurant, while the young team in the kitchen skilfully produce imaginative dishes from the typical ingredients of the lagoon, such as fish and shellfish caught by local fishermen, vegetables cultivated on the restaurant’s estate, and the herbs which grow wild among the vines.

The chef's commitment
Yellow tomatoes, aubergines, onions and the proverbial castraure artichokes are grown using traditional methods in vegetable gardens tended by the island’s local inhabitants who supply this restaurant. In addition, depending on the location and level of salt in the soil, various herbs and flowers typical of the lagoon are also used to add flavour to Chiara and Francesco’s dishes. Last but not least, the fermentation lab allows the restaurant to make good use of any excess produce and fish waste.
