This brasserie is part of the upscale Karel V hotel and shares its medieval charm. Once a monastery, the property has retained its original character, with Delft blue details and tiled floors reinforcing its rustic appeal. The cooking taps into that sense of tradition, with an emphasis on quality produce, classical techniques and carefully considered vegetable accompaniments.
