A set menu for tonkatsu is a unique concept. Tenderloin, loin and shoulder are served one slice at a time, so every item can be enjoyed hot to the very end. Unusually, the meat is served with the cut face up. The reason is that skilful frying firing brings the meat juices to the surface, so placing the morsels in your mouth facing the same way works to bring out the flavour more. Only this set menu so clearly highlights the difference in each cut’s flavour.
