MICHELIN Guide’s Point Of View

Red pine needles and bitter lettuce are common ingredients in traditional Korean medicine, but unheard of in French cuisine - that is, unless one is dining at The Green Table. Let's just say Chef Kim Eun-hee likes to put her own spin on things. Using classic French techniques, Kim makes the local and seasonal ingredients she uses the stars of the show. As unorthodox as it may sound, her use of Chinese sage - a bitter medicinal herb - with butter as an ingredient for the sauce she serves with fish actually works.
