MICHELIN Guide’s Point Of View

The chef went to France in the 1980s to study under one of the originators of Nouvelle Cuisine. The restaurant is named after the Eurasian woodcock, said to be the ‘king of game’; he likened the bird’s uniqueness to that of his restaurant. The free-spiritedness he learned under Alan Chapel gives rise to an individuality that finds an outlet in, for example, the use of Japanese ingredients in his cooking. The ‘Boneless Pike Conger’ is a good seasonal example.
