MICHELIN Guide’s Point Of View

This historic establishment of Eyzies has been enjoying a new lease of life in the hands of Mathieu Métifet, a youthful chef who is beginning to make a name for himself. A former oyster farmer, he concocts generous dishes rich in character, like his signature dish: the Centenaire’s legendary razor clams with a creamy morilles sauce and home-smoked duck breast. While strongly influenced by Périgord, he enjoys adding the odd exotic touch (spices, marinades, rum) from his wife’s homeland, Réunion.
