MICHELIN Guide’s Point Of View
The specialities at this kappo restaurant are fish and rice. Owner-chef Kakutani wants his customers to enjoy both the taste and the cooking process, so uses a cooking stove and charcoal grill. To end comes local Hinohikari rice cooked in an earthenware pot. He procures brown rice and mills only the amount necessary and cooks it to be nicely moist and springy. His passion also comes through in the Bizen ware serving dishes, which he made himself.
