MICHELIN Guide’s Point Of View

Sushi made from mackerel brought in from Wakasa Bay was a treat at festivals in Kyoto and on formal occasions for important local merchants. Founders Izumiya Uhee took note and started the restaurant as a speciality shop in the mid-Edo period. The speciality is whole-mackerel sushi. Fatty mackerel and vinegared rice are wrapped in kombu, giving it umami and flavour. Also popular are the whole-hamo sushi in summer and steamed sushi in winter.
