MICHELIN Guide’s Point Of View

The main building with its shingled roof and the tearoom, Kuzuya, testify to 450 years of history. The ryotei has been in the same family for 15 generations, but no single approach rules when it comes to the cooking, say the chefs. In place of the katsuo-bushi, the dashi is drawn from dried tuna, after the style of a previous owner-chef, Eiichi Takahashi. Seasoning the Akashi tai tsukuri with tomato soy sauce was the idea of the current owner-chef, Yoshihiro Takahashi.
