After a thorough renovation this onetime haunt of the likes of Princess Diana and the Rolling Stones is back as La Zambra Resort. The name refers to a regional form of flamenco, and while there’s no mistaking that the current iteration for anything but a Hyatt, the hotel has a sun-dappled, free-spirited air that’s true to its origins. Step through the gates into a cloister-like compound with airy white courtyards, elegant archways, gurgling fountains, and stately palm and cypress trees. There’s calm and quiet around the aquamarine pools (especially the adults-only version), in the earth-toned suites with views of the mountains and the surrounding golf course, even over tapas and sunset drinks at one of several restaurants and bars overseen by a chef from San Sebastián. It’s the kind of place anyone, rock star or not, would be pleased to disappear for a few days.
